I went into this book without even reading the synopsis and based on the cover, I was expecting a cute rom-com where the protagonist has to come to terms with her overbearing family. Well, two chapters in, they were shoving a dead body in a trunk and trying to cover up a murder… There still was an overbearing family and a romance, but this book was more Weekend at Bernie’s than anything else. Although the plot was a little ridiculous and all over the place, it was a light and fun read, perfect for a weekend at home.
Inspired by the flashback to the dorm room mug cakes the main character makes with her college boyfriend, I decided to try one of my own. I wasn’t brave enough to try her kimchi and hotdog savory cake, but this chocolate mug cake is the perfect quick cure for your chocolate cravings.
Chocolate Mug Cake
- 3 Tbsp all-purpose flour
- 2 Tbsp granulated sugar
- 1 Tbsp unsweetened cocoa powder
- ¼ teaspoon baking powder
- dash salt
- 3 tablespoons milk
- 1 tablespoons canola oil (or melted butter)
- 1/8 teaspoon vanilla extract
- 1 tsp chocolate chips
Spray the bottom of a microwave-safe mug or coffee cup lightly with cooking spray.
Add flour, sugar, cocoa powder, baking powder, and salt and stir together.
Add milk, canola oil, and vanilla extract and stir until smooth, being sure to scrape the bottom of the mug. Stir in chocolate chips or sprinkle them on top.
Cook in microwave for 70-90 seconds until cake is just set, but still barely shiny on top. Allow to rest in microwave for 1 minute before consuming.
